3 tbsp butter, divided
1 garlic clove, grated or minced (or 1 tsp garlic powder)
1/2 cup white wine (florio sweet marsala)
1/2 cup chicken broth (better than boullion)
1 1/2 cup cream (or milk - makes a thinner sauce)
1 tbsp honey or agave syrup
1/4 cup lemon juice
3 tbsp chopped fresh tarragon (or 1 tbsp dry tarragon)
In a saucepan, medium heat, melt 1 tbsp butter and add garlic. Cook for 30 seconds (don't brown it!) and add wine. Cook for 30 seconds to burn off alcohol and add chicken broth. Bring to a boil and reduce by half.
Reduce heat to low/medium and add cream (milk,) honey (agave,) lemon juice and simmer for 5-8 minutes until thickened to desired consistency.
Remove from heat, add remaining 2 tbsp butter and tarragon. VIOLA!
