PEAR CHUTNEY

4 ripe bartlett pears, peeled, cored and cut in half

1/4 cup lemon juice

1/2 cup brown sugar

1 1/2 tsp ground cinnamon

1/2 tsp ground cloves

1/4 cup olive oil

1/2 cup maple syrup

2 tsp minced ginger

1/3 cup cranberries

1/3 cup golden raisins


Preheat oven to 350*

Toss pears in lemon juice, 1 tbsp of the brown sugar, cinnamon, and cloves.

Place pears cut side down on parchment lined baking sheet.

Brush pears with olive oil.

Roast pears until caramelized and tender (40-50 minutes.)

Remove from oven and cool.


Bring remaining ingredients to a boil in a saucepan on medium heat.

Reduce heat to simmer 5 minutes. Remove from heat and cool.


Cut pears into bite-size cubes and combine in pan.

Best when chilled 24 hours to let flavors meld!
