2-3 pounds chicken (I used boneless, skinless breast)
3 tbsp olive oil
1 large onion, chopped
1 tbsp ginger (tubes in the produce section are awesome!)
1/2 tbsp garlic powder
2-3 pounds sweet potatoes, peeled, cut into bite-size chunks
15oz can crushed tomatoes
1 quart chicken broth
1 cup peanut butter
1 cup roasted peanuts
1 tbsp ground coriander
Brown the chicken over medium-high heat in the olive oil. Set the browned chicken aside.
Saute the onions in olive oil/chicken drippings 3-4 minutes, stirring and scraping the pan for the browned bits!
Add ginger and garlic powder and saute 1-2 minutes. Add sweet potatoes, stir well to combine.
Add broth, tomatoes, peanut butter, peanuts, coriander and stir well to combine. Add chicken, cover, bring to simmer and cook for 90 minutes (check after an hour.)
Serve with steamed rice, if desired
